
It's not a ritual — it's alignment, and it's doing exactly what tension does to any fiber.
The Real Mechanism
Glutenin and gliadin bond together to form gluten. Picture a ball of loose fibers pointing every which way — that's raw, undeveloped gluten. Stretch and fold aligns it. Hold one end while you pull the other, or pull both ends apart — that tension lines the fibers up along one axis so each strand carries the load. Fold the stretched section over itself and you double the strength from that pull. Pull again at 90 degrees and you build strength in the second direction too, turning a random tangle into an aligned, two-dimensional network. It usually takes more than one round to get there.
One Move, Several Names
Stretch and fold is the umbrella — not one technique among several, but the thing several named techniques all are. Slap and fold is the same motion; the slap itself doesn't align anything, it just tacks the dough to the counter so it can stretch further. Kneading is repeated stretch and fold, useful on stiffer doughs. Coil folds are stretch and fold too, just a gentler variation. Different hands, same job.
How Many Rounds
For dough in the 65-75% hydration range, two rounds — of 4-6 pulls until the dough tightens up — is sufficient. Higher hydration dough needs more: three rounds or more before it holds together the same way.
Why the Rest In Between
Gluten is viscoelastic. Stretch it and the strands resist, wanting to spring back like a rubber band held taut. Try to pull again right away and you're fighting that tension — the dough tears instead of stretching further. A rest, usually around 30 minutes after mixing and between rounds, lets that tension dissipate. The network relaxes into its new, aligned position, and the next pull can extend it instead of ripping it.
Why It Matters
All of that alignment and strength is building toward one purpose: the network becomes a barrier. Its primary job is holding onto the gas fermentation is producing — that's what gives your loaf its rise. It also holds the dough together in a tight, cohesive ball instead of a slack, spreading mass. Two big benefits from a handful of pulls: a loaf that actually rises, and a dough you can work with instead of one that spreads across your counter. That's the whole reason stretch and fold exists — not ritual, not tradition, just tension doing exactly what tension does to any fiber.
